Peaches are one of my all-time favorite stone fruits of the Summer. There is nothing quite like the juicy nectar of a golden, organic fuzzy peach, a white peach, or even a lunar one which is shaped like a UFO. Aside from eating them by themselves which in itself is a delicacy, peaches add an invaluable flavor to many things including, surprise surprise, salads! So, as a little twist, try slicing them in thin lunar bites, and then sauté them in a tiny bit of butter and a tiny bit of cane sugar for about two minutes. I will then toss the peaches in my salad with, say, a little bit of champagne dressing and without fail it comes out supremely well. So the next time your in the mood for a delicious organic salad, try to sauté one of your favorite sliced fruits quickly and then added to your creation so you gets out of a warm and cool sensation as well as sweet with salty and bitter.

You can try this with several fruits: apples, peaches, pears, nectarines, apricots, blackberries, strawberries… And of course you could even incorporate them raw. Then for an added burst of deliciousness, pair it with the perfect shaved cheese. A firm manchego, a feta, ricotta salata, or even sharp organic cheddar with take your plate to the next level. I’m particularly fond of organic white cheddar with sage and peaches. Bon Appetite!
